There might be a lot of restaurants in Denver that serve queso, but when it comes to the best queso in the world, there can be only one: Illegal Pete’s.

There is a little myth about how Illegal Pete’s came up with the recipe. Long ago, a Titan by the name of Petetheus learned that the Gods were withholding a secret that would make the lives of men better. Feeling sympathetic for these suffering humans, Petetheus tricked the Gods and stole this secret from them. And so he brought queso to mankind, giving them joy and cheesy goodness.

Sadly, Zeus punished Petetheus and chained him to a rock so that an eagle could eat his liver every day. But from his suffering, mankind gained the greatest gift of all: Illegal Pete’s queso. For those that believe in the other myth, it goes something like, “And on the seventh day, God rested…and created queso.”

The thing that makes Illegal Pete’s queso so good is hard to pinpoint: the creamy texture, the flavor—which is nothing fake or chemically like most quesos—and the combination of spicy peppers with tangy yellow cheese all make for a perfect queso. Combine this with the homemade chips at Illegal Pete’s and it’s truly a gift from the heavens.

The queso at Pete’s is versatile and delicious: It goes perfectly with just about any dish on the menu, from basic chips and queso to the big fish burrito. You just can’t go wrong with it. It is perfection through and through.
